white bean burgers

 A healthy alternative to beef burgers. Vegetarian and delicious!
2-3 tablespoons olive oil for frying
1/2 onion, finely chopped
1 garlic clove, minced
2 carrots, peeled and shredded
1/4 cup fresh finely chopped spinach
1/4 cup peas
sea or kosher salt and fresh black pepper
1 can white beans, drained and rinsed
1 tablespoon fresh lime juice
1/4 cup seasoned bread crumbs
1 egg, beaten
3 whole grain soft buns, for serving
Heat olive oil in a large skillet over medium low heat and saute onion until translucent, add garlic, saute until fragrant, add carrot and S&P - saute for another 4 to 5 minutes. In a
 large mixing bowl mash the beans and peas with a fork leaving them a little chunky. Add spinach, lime juice, bread crumbs, egg and sauteed vegetable mixture. Season well with salt and pepper. Use a fork to mix well. Refrigerate 1/2 – 1 hour. In a large skillet heat enough oil to generously cover bottom of pan over medium heat. Shape into 3 equal-sized patties. Fry for about 5 minutes on each side or until browned. We topped our burgers with spicy
cheese and tomato - yum!
