jerk salmon with mango salsa

As the spring rolls on, our vegetable and fruit selection grows! Mangoes were $1 each at the store on Sunday so I bought a few for a sweet mango salsa.
1 mango, peeled and cubed
1 small tomato, diced
1/2 white or red onion, diced
1/2 cucumber, peeled and cubed
2 tablespoons cilantro, chopped
1 tablespoon honey
S&P to taste
I marinated two nice salmon fillets in Nashville Jerk run and EVOO - combine about 1 heaping tablespoon of Jerk rub with 2 tablespoons EVOO. Jerk seasonings combine cilantro, allspice and some hot pepper to give a tangy heat. This Jamaican style sauce or rub is great on chicken too. Nashville is know for hot chicken - very similar flavor to jerk.
Marinate the salmon for about an hour in the fridge and then grill for roughly 2 minutes flesh-side down, 4-5 minutes skin-side down. Top with salsa and enjoy! I paired our fish with a fresh salad - rice or couscous would be a delicious side too.
