salad works

As spring rolls on Vance and I have been craving grilled fish, fresh veggies and lovely salads with all the fixin's. Sometimes a salad just works.
A dinner salad with cherry tomatoes, red grapes, corn, croutons, and carrot over romaine lettuce with a honey vinaigrette dressing.

Honey Balsamic Vinaigrette
• 1 tablespoon Dijon mustard
• 1 tablespoon honey
• 1/4 cup balsamic vinegar
• Sea salt
• Freshly ground pepper
• 1/2 cup extra virgin olive oil

Blend or whisk all ingredients except EVOO until very smooth. Drizzle in the olive oil, incorporate well. 
Nothing tops a fresh salad like homemade croutons. I cubed day old French baguette, tossed with EVOO, S&P and some dried thyme. Bake in the oven at 350 for 15 minutes until golden brown.

A salad is truly finished with some fresh ground pepper and a few sprinkles of kosher salt, delicious!
We enjoyed our salads with some teriyaki grilled salmon (5 minutes on the grill). In my office, we often call our lunches, garbage salads - because they have anything and everything in them. Try some apple, peas, peanuts, craisins, hearts of palm, turkey, roasted potato, white beans or capers on your salad. P.S. I am never buying bottled salad dressing again!
